Who doesn’t love sweet potato fries? To me, there is nothing better than this combination of salty and sweet. I have to make them in small batches so I don’t eat too many.
Ingredients:
4 large sweet potatoes (about 4 pounds), peeled and ends cut off
2-3 tablespoon canola oil (enough to generously coat the sweet potatoes)
2 teaspoons sea salt
1 teaspoon garlic powder
1. Preheat the oven to 375.
2. Using a mandolin on the French fry setting, julienne the sweet potatoes.
If you do not have a mandolin, cut the sweet potatoes into strips no more than 1/4 inch wide and tall. Increase the temperature of the oven to 400.
3. Toss the sweet potatoes with the canola oil and one teaspoon of salt.
4. Place on a greased baking try, then bake until golden and crisp – about twenty minutes – stirring halfway through.
5. When done, remove from oven and sprinkle with garlic powder and remaining salt.
