I make this recipe all the time. It is super easy, packs a ton of vitamins and I always have the ingredients on hand. Use fresh spinach if it’s in season, but frozen works well during the winter months.
Substitute sour cream for Greek yogurt, if you like.
1 tablespoon of butter
1 10 ounce package frozen chopped spinach, defrosted
4 – 5 medium cloves of garlic, silvered
1 tablespoon olive oil
3/4 cup of Greek yogurt (full fat or 2%)
1/2 cup Parmesan, grated
Salt and pepper to taste
1. In a large pan, heat a drizzle of oil and melt the butter.
2. When the butter is melted, add the garlic and sauté til lightly browned. Add the spinach and season with salt and pepper.
3. When spinach is warmed, stir in yogurt and Parmesan cheese. If needed, adjust the consistency by adding more yogurt or a tablespoon or two of whole milk.
